Buffalo Cauliflower, say what?

The month of February is dedicated to my husband. I asked him to think of a list, what are his favorites meals we had together? But, this was not on the list. It snuck in yesterday upon special request. He loves buffalo flavored everything! Versions of this recipe had been floating around Pinterest and Facebook. However, he saw it on the Cooking Channel and made a request. I decided to make my own concoction.

It was tested amongst friends and is just about gone! This makes quite a few servings and there’s still leftovers. I’d say it was a hit. Hope you enjoy!

 

Buffalo Cauliflower

10 servings

 

3/4 head of cauliflower broken/cut into uniform bite size pieces

1 cup all purpose flour

1 and 1/4 cup almond milk

1 tsp. onion powder

1 tsp. garlic powder

1 cup favorite wing sauce*

 

Preheat the oven to 450 degrees and grease pans lined with aluminum foil

Whisk together: flour, milk, garlic powder, and onion powder. This mixture will be thick.

In batches, add cauliflower to batter. Ensure florets are completely coated and place on lined pans.

Bake for 15 minutes and remove from oven. Brush on wing sauce.

Bake another 8 minutes.

Serve with your favorite dip. We paired these with bleu cheese dressing.

This was so popular, we must make again!

*We were out of wing sauce and needed to whip up something quick. This was easy and mild. You can certainly add more heat to your taste.

Jeni’s Mild Wing Sauce

1/2 cup tomato sauce

1/4 cup hot sauce

1/4 cup melted butter

3 cloves minced garlic

1/4 tsp. Worcestershire

1/2 tsp. apple cider vinegar

1/2 tsp. salt
